Recipe: Chocolate mousse! (Plant-based & from scratch)

Gluten free, vegan, takes 5 min to prep and only 3 ingredients!

When you want to reach for something chocolatey and rich, look no further! The best part about this mousse is that even though it tastes like a cream-based dessert, it’s completely plant based (looking at you, fellow friends who have a hard time digesting dairy) and rich in protein.

Super nutrient-dense

This recipe has only three ingredients, and each pack a powerful nutritional punch.

Tofu, made of soybeans, is a great source of calcium and a complete protein (one of very few plants that contain all 9 essential amino acids).

Cacao is my very favorite superfood. It provides immune support, is rich in antioxidants, magnesium and iron, and has been proven to naturally improve mood and energy (without a crash afterwards)(check out more benefits of cacao here).

Maple syrup, used in this recipe as the sweetener, also has a host of health benefits. It is packed with vitamins and minerals, has anti-inflammatory properties and might help prevent some chronic illnesses (see a full review of the benefits of maple syrup here).

Plant-based chocolate mousse

  • 1 package of silken tofu (16g)

  • 1/4 cup cacao (powder) (or to taste- I like mine pretty strong, but you could use less)

  • 2-4 tbsp maple syrup (I like less sweet, on the 2 tbsp side)

  • Optional: 1 tsp vanilla extract, cinnamon, pinch of salt

Combine all ingredients in a blender. Blend on high, then pour into a mason jar and store in the fridge. Immediately after blending the mixture will be liquid, but after 15 minutes or so it will set into a mousse texture.
